Rice
Salad
Ingredients:-
3 cups cooked rice
1/2 cup cooked peas
1/2 cup cooked corn
1/2 cup raisins
1/2 cup chopped red and
green pepper
1/3 cup olive oil
3-4 sliced tomatoes/cherry
tomatoes
1 cup diced chicken (cooked)
Salt and fresh ground
pepper to taste
Method:-
Let the rice cool completely.
Combine all ingredients in
a bowl.
Toss with olive oil. Serve
on greens or lettuce and Garnish with tomatoes.
