Sandwich

Lettuce and Cucumber Sandwich
(For the veggies who love the cool cucumber. The most easy-to-prepare)

Ingredients
Cucumber: 1; Butter: enough to apply a thin layer on bread; Lettuce leaves: 2; Salt: to taste; Pepper: to taste; Tobasco sauce: 4-5 drops; Cocktail onions and cucumber strip: for garnish


 
Method
Slice cucumber (in a vertical position) into very thin strips. Break lettuce with your hands in a bowl. Add rest of the ingredients, salt, pepper and Tobasco sauce. Gently toss the ingredients, careful enough not to break cucumber strips.

Apply butter on bread slices. Place layer by layer of lettuce leaves and cucumber strips. Close sandwich with second slice of bread. (If you love cheese, you could add an extra layer of cheese in the sandwich). For garnishing, take a thin cucumber strip and a cocktail onion and place it on the top of the sandwich with the help of a toothpick. Baked Potatoes with Parsley (recipe given) works great as an accompaniment. 


Baked Potatoes with Parsley

Ingredients
Potatoes: 2; Oregano: 1 tsp; Red chilli powder: 1 tsp; Salt: to taste; Parsley (you could substitute it with coriander leaves): a few sprigs; Olive oil: to toss


 
Method
Par boil potatoes. Slice them into wedges once they cool down. Toss potato pieces in olive oil with all the remaining ingredients. Now, bake them in the oven at 150 degrees for 15 mins. If you want a thicker crust formation, you could bake them for a little longer. Serve with sandwiches and you are ready for your picnic.

Chicken Salami with Pineapple and Mustard
(For the non-veggies, who love to gorge on chicken. You could get readymade flavoured chicken salami from the market)

Ingredients
Brown bread: 2; Butter: enough to spread a thin layer on the bread; Pineapple rings (thinly sliced): 2; Lettuce leaves: 2; Chicken salami: 2; Edam cheese (a Dutch cheese, thinly sliced): 2; English mustard: 1 tsp; Salt: to taste; Pepper (optional): to taste; Cocktails onions and pineapple cubes: for garnish


 
Method
Take brown bread which is a healthier option and use ones that are a day-old. This helps the bread slices to absorb moisture. Break lettuce leaves with your hands and keep aside in cold water. Apply butter and/or English mustard on bread slices. Place slices of Edam cheese over the bread in a manner that it covers the whole slice of bread. Top the layer of cheese with chicken salami and place pineapple rings over them. Sprinkle salt and pepper, (remember salami also contains salt). Lettuce leaves will form the topmost layer. Close the sandwich with the second slice of bread. Push a cocktail onion and pineapple piece through a toothpick and place it in the centre of the sandwich.

Cut into triangles and serve with the dip of your choice. You are ready to go... .

 
Mango Panna
(How can an outing be complete without a cool drink? This Mango Panna, with a cardamom twist to it, is a healthy substitute to aerated drinks)

Ingredients
(For six servings)
Raw mango: 1 kg; Jeera (Cumin powder): 5 gm; Cardamom powder: 5 gm; Jaggery: 250 gm; Mint leaves and ice cubes: for garnish


 
Method
Boil raw mangoes, deskin and make into a pulp. Blend the pulp in a mixer to remove any lumps. If needed, use water the mangoes were boiled in. Cut jaggery into small pieces so that it dissolves easily. Mix in the jaggery and store in the fridge.

To serve:
In a glass, take 3/4th of the liquid. Add water to it and mix. Put cumin and cardamom powder and stir well. Serve with mint leaves on top. A great drink to have with friends.
